***93 Points - Robert Parker 's Wine Advocate***
Palo Cortado is a rare type of "sherry-style" wine that is initially aged under flor to become a fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively as an oloroso. The result is a wine with some of the richness of oloroso and some of the crispness of amontillado.
Tasting Notes Amber colour with copper and greenish reflections. Very intense aroma with tobacco leaves, wood and spices like pepper and clove aromas, notes of citrus peel and fine pastries. Nuts like walnut or hazelnut nuances. On the palate it is dry, but mouth-filling, well-defined acidity that disappears to leave room for a saline sensation. …

POLEY Amontillado en rama- 35 Year Old | 50cl Bottle
*** 92 Points - Robert Parker's Wine Advocate ***
This extremely old wine proceeds from the winery’s foundational Solera, when José María Toro Albalá began to produce wines in Lagar del Carmen, in 1922. The wine is obtained in a subtle and slow way; it’s the time that induces its transformation. After an ageing of 10 years under a veil of flor in American oak butts, the veil begins to weaken and lose its protection, allowing the start of a long oxidative ageing. A unique wine acknowledged with 92 Robert Parker points.
TASTING NOTES

Don Ramon
Carinena is just one of several DO titles used for the wines of Aragon, northern Spain. Winemaking in the area dates back to at least Roman times, and records from that era confirm that locals drank Carinena wines mixed with honey. Many other historical records attest to the quality of the wines from Carinena; King Ferdinand I of Aragon listed it as his preferred wine above all others and the French philosopher Voltaire thought it heavenly. Wine has long been the economic mainstay of the region and a source of great pride and renown.

When the Moscatel must has reached a certain degree of extended maturation, it is fortified with wine-based distilled spirit to bring the alcohol content up to 19%. Once clean and stable it passes to the criaderas where it is left to mature through the process of oxidative ageing. This is achieved through the oxidation of the wine whilst in barrel and racking within each tier of the criadera. This traditional system is characterised by the carefully orchestrated movement of wine between the soleras and criaderas within each cellar. With this particular wine, the ageing process lasts for a period of 5 years. …

Barbadillo
A superb Fino sherry, aged for a minimum of 3 years in Barbadillo’s cellars.
Barbadillo’s Finos are more Manzanilla-like in style, but are aged in Bodegas with less exposure to the cooling sea breezes. The flor in the barrels grows vigorously in these cellars so the wine is a little more nutty and toasty than the more appley and yeasty Manzanillas of Sanlucar.

Manzanilla Extra Dry Sherry
Barbadillo
Manzanilla is Barbadillo’s speciality and this excellent example has been aged for 3 years in Barbadillo’s cellars.
Fino style Sherries age under a layer of “flor” (a naturally occurring layer of yeast that grows on top of the wine in the barrel); this ensures the wines do not oxidise as there is no exposure to the air. The cooler maritime microclimate of Sanlúcar ensures flor grows particularly thickly all year round producing these very fresh, tangy Manzanillas, unlike the more oxidised Finos aged in the inland town of Jerez, where the flor dies back in the winter and summer months.

A 15 year old sherry wine. Attractive colour of antique gold. The aromatic complexity reveals toasted almonds, walnuts and raisins. On the palate it is pleasant, rounded and harmonious. Deliciously smooth and lingering.
The Palo Cortado sherries are particularly special within the Jerez-Xèrés-Sherry Designation of Origin. Criadera Palo Cortado, Sherry
Barbadillo
Founded by Benigno Barbadillo in 1821 Barbadillo are the most important producers of Manzanilla. With 16 ageing cellars full of soleras they make excellent examples of the full range of Sherry styles. This delicious Palo Cortado comes from the younger part (Criadera) of the solera in the small 18th century La Sacristia Cellar and bottled unfiltered (En Rama).
Palo Cortado is one of the rarest Sherries starting life as a Fino or here as a Manzanilla aged unoxidized under the Flor, a blanket of yeast that floats on the surface blocking the air getting to the wine. In Palo Cortado the flor dies, and the wine is exposed to oxidation becoming a dark golden colour, rich and nutty, with the freshness of a Fino but the richness of an Oloroso. …
