Description
The Fino 15 Year by Toro Albalá is a premium dry sherry-style wine from the Montilla-Moriles region of Spain. This wine is unique because it is made using Pedro Ximénez grapes, unlike most Finos which are made from Palomino. Toro Albalá is a highly respected winery, known for its extensive aging processes and its commitment to traditional methods.
Tasting Notes:
Golden in colour with copper and greenish highlights. Intense and piercing aroma with notes of almonds, yeast, and green apples, with a briny, saline quality typical of Fino sherry. The long aging of 15 years imparts more complexity, depth, and concentration of flavours than younger Finos.
Serving & Food Pairing
Serve chilled, ideally between 8-10°C. This Fino is excellent when paired with tapas, seafood, olives, almonds, and other Mediterranean-style dishes. It also works well with cured meats and Manchego cheese.

Names have changed and all labels are new; they are all named Poley and have a reference to the number of average years the wines have spent in the solera. There is a new NV Poley Fino Pasado en Rama Solera 15 Años, which is an unfortified Fino with 15.5% alcohol and 15 years of average age, with a golden color and deep nose with notes of esparto grass, brine and green olives. It's tasty, pungent and very persistent, with a salty finish. All Poley wines now come in 500-milliliter bottles. There's no clear indication of saca or bottling date. 14,000 bottles were produced.
