Description
This Gran Reserva 1999 Don PX is one Toro Albala's signature wines. This is an elegant and complex wine, made with Pedro Ximénez grapes harvested in mid-August and laid under the hot Andalusian sun to concentrate their sugars and flavours. Each bottle is taken care of with exclusivity, from the harvest to the drying of the grapes to the ageing in cask, and thus obtaining a unique personality.
Tasting Notes
Dark mahogany in colour, with viscosity in the glass. Aromas of coffee, dark chocolate, raisined fruit, grapes,plums, dried apricots, hints of cinnamon, a little balsamic and citrus, orange dominate the nose. On the palate it is sweet perfectly balanced with citrus acidity and a long persistent finish.
Serving and Food Pairing
Pop and pour Don PX slightly chilled, ideally between 10-14°C (50-57°F). Excellent with chocolate desserts, pouring over vanilla ice cream, with fruit-based desserts , blue cheese, desserts and aged hard cheeses such as Manchego. The wine’s rich, sweet profile is an excellent match for the decadent, buttery flavor of foie gras or with cured meats, particularly those with a sweet or spicy profile, like chorizo or Iberico ham.

How to store your PX wine

I tasted a completely revamped line from Toro Albalá, all wines with new labels and a more modern image and some bottlings to celebrate the winery's 100th anniversary. Many wines now come in half-liter bottles and with a glass stopper. They now produce 300,000 bottles per year.
Curiously enough, the 1999 Don PX, which has 17% alcohol and 402 grams of sugar, feels lighter and less concentrated than the 2002 I tasted next to it. And the wine seems more perfumed, even with a floral touch that at times reminded me of Moscatel, and it has some sweet spices, vanilla and cinnamon. It's tasty, showy and easy to drink, velvety and seamless, with a soft texture. 12,000 bottles and 20,000 half bottles were filled at different times, but these wines evolve at a very slow pace and there should be no difference between bottlings.
