Description
This extremely old wine proceeds from the winery’s foundational Solera, when José María Toro Albalá began to produce wines in Lagar del Carmen, in 1922. The wine is obtained in a subtle and slow way; it’s the time that induces its transformation. After an ageing of 10 years under a veil of flor in American oak butts, the veil begins to weaken and lose its protection, allowing the start of a long oxidative ageing. A unique wine acknowledged with 92 Robert Parker points.
TASTING NOTES
Sight: Amber and, when shaken, it tints the glass with a beautiful range of copper tones.
Aroma: Very intense, spicy and noble woods in still glass, leading to a glaze touch and fine pastry notes. A saline and fresh background aroma accompanies memories of raisined fruits.
Taste: Dry and sharp entry, saline and mineral. Elegant and enlengthened bitter finish with noble wood aromatic hints. High persistency of aromas and tastes.
SERVING SUGGESTIONS
This exceptional wine is especially recommended with highlighted asparagus and artichoke dishes. It can also be paired with meats such as venison, bull’s tail, tuna tartar and foie kettledrum.

Names have changed and all labels are new; they are all named Poley and have a reference to the number of average years the wines have spent in the solera, like the NV Poley Amontillado en Rama Solera 35 Años a Amontillado. It has 21% alcohol and 235 years of average age, 15 years under flor and the rest topped up in an oxidative way. It's salty, sharp and pungent, with flavors of saltpeter, iron and iodine, finishing dry, long and with a salty twist. It's pungent, complex and very long. All Poley wines now come in 500-milliliter bottles. There's no clear indication of saca or bottling date. 10,000 bottles were produced. Luiz Gutiérrez
