The 1980 Blandys Sercial Madeira is "Based on Sercial grown on the north west corner of the island at Seixal and Porto Moniz where I am told that this grape produces the most gentle fruit: lovely clean, lifted aromas, green fruit, apple peel with a touch of citrus; lovely fresh appley flavours with a hint of toffee and milk-chocolate, perhaps just a touch of salinity, steely acidity running all the way through, fresh and lithe on the finish, dry but not austerely so with 55g/l of residual sugar. Madeira Bual is typically sweeter than Madeira Sercial or Madeira Verdelho, but not quite as intensely sweet as Malmsey. You should expect a light mahogany/copper coloured wine with aromas of maple syrup, roasted walnut notes and hints of coffee. On the palate its high acidity will create a much needed balance against the sweetness making the sugar barely noticeable. Flavours of figs, vanilla and caramel should dominate the palate and the wine should finish off long with caramelised citrus notes.

Malmsey (also known as Malvasia or Malvazia) has its fermentation halted when its sugars are between 3.5 and 6.5° Baumé. This style of wine is characterised by its dark colour, rich texture, and coffee-caramel flavours. Like other Madeiras made from the noble grape varieties, the Malvasia grape used in Malmsey production has naturally high levels of acidity in the wine, which balances with the high sugar levels so the wines do not taste cloyingly sweet.
