    Small amounts of characterful dry, old, vintage-dated Amontillados and extremely old, vintage-dated sweet Pedro Ximénez are consistently released by Toro Albalá from the Montilla-Moriles appellation in eastern Spain. With the best and oldest vineyard holdings in Montilla, Toro Albalá is one of the premier producers of Pedro Ximenez today. As the first Montilla producer to bottle dessert-style Pedro Ximénez (in 1970), Toro Albalá is still the only expert in 100% vintage Pedro Ximénez.

    Featuring:
    POLEY FINO PASADO 15 Year Old
    This wine is obtained after 15 years of biological ageing through the criaderas and solera system. In the last years, the veil of flor begins to weaken. Then, the oxidative ageing begins, which makes it rich in complexity and elegance. The result is a golden to amber coloured wine with complex aromas of dried fruits, nuts, and yeast, with hints of caramel, toffee, and salinity. The palate is rich and full-bodied, with flavours of almonds, walnuts, dried apricots, and subtle spice. The finish is long and lingering. Serve slightly chilled, around 12-14°C and pair with a variety of tapas, especially those featuring nuts, cured meats like Jamón Ibérico, and aged cheeses. It also pairs well with grilled seafood, roasted vegetables, and dishes with umami flavours.

    POLEY OLOROSO 15 Year Old
    Produced exclusively with Pedro Ximénez grapes. Elegant, with an intense old wood aroma and other noble aromas, well-balanced, aged in a 15 years long oxidative Criadera and Solera system. Awarded with the Gold Mundus Vini medal. The wine shows colours of mahogany, old gold borders, with viscous legs, with intense aromas of old American oak wood, toffee, smoked, vanilla, and caramelized nuts. The palate reveals a dry, soft, non-astringent, saline sensation. Wood appears as an elegant bitterness that makes it complex and persistent. Serve Oloroso sherry slightly chilled and pair with a variety of foods, including cured meats, strong cheeses, and rich stews. It also pairs well with desserts featuring nuts and dried fruits.

    POLEY CREAM 10 Years
    Deep amber to mahogany colour with a rich, glossy sheen. It has complex aromas of dried fruits, nuts, caramel, toffee, and vanilla. The palate is luxuriously sweet, full-bodied, and long, with lingering notes of sweet spices and dried fruits.The Toro Albalá Poley Cream is a decadent and well-crafted sweet sherry that exemplifies the best of Montilla-Moriles winemaking traditions. Its rich flavours, elegant presentation, and versatility make it a delightful choice for dessert pairings or as a luxurious after-dinner drink.

    Don PX 1993
    With a residual sugar content of nearly 400g/litre this is is honey in a glass! Following harvest, the grapes were allowed to dry out in the sun until they become almost raisins, then the wine is pressed out and fortified to give such a high sugar content. The result is a deep dark mahogany coloured wine with layers of dried fruits, dates, figs, plums, raisins, coffee, mango and chocolate. The palate is immense and the sweetness is balanced by a structured acidity that keeps it in check. The experience concludes with a never-ending finish. Best served slightly chilled, between 12-16°C and paired with desserts, particularly those featuring chocolate, caramel, or nuts or enjoyed on its own as a dessert wine. It will keep for many decades, and once opened can be enjoyed for many months when kept in the fridge.
