When the Moscatel must has reached a certain degree of extended maturation, it is fortified with wine-based distilled spirit to bring the alcohol content up to 19%. Once clean and stable it passes to the criaderas where it is left to mature through the process of oxidative ageing. This is achieved through the oxidation of the wine whilst in barrel and racking within each tier of the criadera. This traditional system is characterised by the carefully orchestrated movement of wine between the soleras and criaderas within each cellar. Fino, Dry Sherry

A superb Fino sherry, aged for a minimum of 3 years in Barbadillo’s cellars.

Barbadillo’s Finos are more Manzanilla-like in style, but are aged in Bodegas with less exposure to the cooling sea breezes. The flor in the barrels grows vigorously in these cellars so the wine is a little more nutty and toasty than the more appley and yeasty Manzanillas of Sanlucar.

TASTING NOTES
Straw yellow in colour. The classis fino aromas are revealed on the nose; nuts, olives and the evocative suggestion of a patient ageing process. In the mouth it is sharp and exhibits full body and perfect balance.

Manzanilla Extra Dry Sherry

Manzanilla is Barbadillo’s speciality and this excellent example has been aged for 3 years in Barbadillo’s cellars.

Fino style Sherries age under a layer of “flor” (a naturally occurring layer of yeast that grows on top of the wine in the barrel); this ensures the wines do not oxidise as there is no exposure to the air. The cooler maritime microclimate of Sanlúcar ensures flor grows particularly thickly all year round producing these very fresh, tangy Manzanillas, unlike the more oxidised Finos aged in the inland town of Jerez, where the flor dies back in the winter and summer months.

This style is a relatively new arrival in the history of sherry production having only been introduced in the 1970’s.

Fino Sherry blended with young, vibrant Moscatel which results in this appealing combination of sweetness and tangy freshness. Aged in cask in the traditional Solera System within the ancient cathedral style cellars of Barbadillo, this wine is a blend of different criaderas.

TASTING NOTES:

Founded by Benigno Barbadillo in 1821 Barbadillo are the most important producers of Manzanilla. With 16 ageing cellars full of soleras they make excellent examples of the full range of Sherry styles. This delicious Palo Cortado comes from the younger part (Criadera) of the solera in the small 18th century La Sacristia Cellar and bottled unfiltered (En Rama).

Palo Cortado is one of the rarest Sherries starting life as a Fino or here as a Manzanilla aged unoxidized under the Flor, a blanket of yeast that floats on the surface blocking the air getting to the wine.
