Cognac is a variety of distilled brandy named after the town of Cognac in France. It is produced in the wine-growing region surrounding the town from which it takes its name. For a distilled brandy to bear the name Cognac, its production methods must meet certain requirements. In particular, it must be made from specified grapes, of which Ugni Blanc is the one most widely used. The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. Cognac matures in the same way as whiskies and wine when aged in barrels, and most cognacs are aged considerably longer than two years.

Delamain Cognac, 1996
Grand Champagne Cognac
A 1996 vintage cognac from Delamain, using first growth grapes from Mainxe. It was matured in their hallowed Vintage Cellar in Jarnac for before selection and bottling.
The family-run house of Delamain is one of the oldest Cognac producers, founded in 1762. The company is rare in that it produces no VS or VSOP Cognac, and also chooses to reduce bottle strengths down to 40% abv with 'faibles' (old, low-strength Cognacs) rather than with water.

Founded in 1868 by Eugène Cusenier in Ornans, Eastern France.
The label reads: This brandy was shipped in 1935 and was bottled by Grants of St James after being held in cask for 26 years.
A large quantity of the original shipment was lost during this period due to evaporation, and the remainder has developed into a magnificent brandy with a mellow bouquet.
