In undeclared vintages Fonseca bottle Guimaraens, provided the quality of the fruit is sufficient. This has a good depth of colour, with a moderate red-tawny hue. The nose has exotic notes of musky scent and spiced woods, together with some chocolate edged fruit. The palate has an impressive texture and sweetness immediately apparent on entry. They advertise significantly and their products are well-represented in virtually every American marketplace. Very very dark. Sweet, spicy, liquorice nose. Very broad start to the palate and then dried fruits on the finish. Lots of firm tannins still. Still relatively embryonic. Heat on the finish. Lovely spice on the finish. Not the most stereotypically feminine Warre style of wine. Powerful finish. Almost brawny with some wild fruit and flower flavours on the nose.

Dolcetto, 1983

Salvano Saverio e Sobrero

A native black grape variety of Northern Italy grown almost exclusively in the provinces of Cuneo and Alessandria in Piedmont. It is relatively easy to cultivate, although it is susceptible to fungal diseases. It ripens before Barbera and Nebbiolo and is often grown in high north-facing sites which would be unsuitable for Nebbiolo. The finest Dolcetto wines come from grapes grown on soils rich with white marls, especially those found on the right bank of the River Tauro. The wines generally are low in tannins and acidity and are usually fruity and fragrant, often with hints of almonds.

Tokaji Royal Aszu Essencia (Half litre, 50cl), Hungary

Situated along the southern slopes of the Zemplén Mountains, Tokaj is characterized by late springs and short growing seasons. The average temperatures are generally cool, with long, sunny summers and dry autumns. Tokaj’s soil is largely clay or loess with a volcanic substratum; vines are approximately 20 years old. The meeting of the Tisza and Bodrog rivers in Tokaj creates a mist similar to that of the fog in Sauternes. The mist encourages “botrytis cinerea,” or “noble rot,” which dries and shrivels the Furmint, Hárslevelü and Muscat grape varieties that comprise Tokaji wines, and concentrates the sugars.

Arman label. From the good 1981 vintage, this lovely red wine has a spicy bouquet and a crisp fruity flavour with a long smooth finish.

Château Mouton-Rothschild’s exceptionally fine wine comes from the best vines on the ‘Plateau de Mouton’ that makes up 90 hectares of the property. In these vineyards, the roots push deep into gravelly soil. Since we’re in Pauillac, Cabernet Sauvignon is the grape that dominates the blend. Depending on the vintage, this can be up to 80%, and is completed by Merlot, Cabernet Franc and Petit Verdot. The grapes are picked by hand and, once destemmed, are put into vats.

Warre's Vintage Port, 1981

Late Bottled Vintage Port

Late Bottled Vintage port is from a single year. The wine ages 4-6 years in old oak casks (opposed to Vintage that ages 2-3). LBV fills the gap between the rubies and the vintage ports since a Ruby Port should be drunk quite young and a great Vintage Port may need 15 to 20 years to really open up and show its splendour. This led to the idea in the 1960s to age the wine 4 to 6 years in large casks before bottling it, thereby producing a wine with the style of a Vintage Port with its deep colour and concentration of fruit but with a more mature character caused by the longer ageing in wood. This particular vintage is from 1981, which was bottled in 1985.

The 1980 Dows Vintage Port has a very dark red/black centre, dark red to brown rim. On the nose there are creamy, blackberries and black cherries, slightly herbal notes (good), smoke and wet stone, sweet. The Dow 1980 has a very complex palate, maturity, red currants and black cherries, herbs and smoked meats, in the middle acidity and tannin (still!), great length - 60 seconds plus of blackberries and plums. This is an extraordinary Dow.

Graham's Port, 1980

Vintage Port

Purple fading to red and finally pink at the rim. Rich blackberries on the nose along with very faint stewed strawberries. The tannins were powerful on Christmas day but mellowed some by the next evening. The blackberries carried through as a prominent flavor, but added a sourish note almost like a sour cherry. The finish starts out with a rich butter cookie note, but then quickly switches to grape stem.

Sweet White Wine

The 1980 Eiswein is a sweet dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing for a more concentrated grape juice to develop.

The high residual sugar concentration give these wines great ageing properties - we tasted this bottle over two days. Served chilled from the fridge after a 2 hour decant. The colour is a mid-amber with green tinge around the rim of the glass. Oxidative notes on the nose, burnt molasses apricots, apple jam, tertiary notes and fruits. On the palate there is characteristic eiswein acidity a little'tart' bitterness.

The 1979 Vintage Port from Warre's is seriously attractive. After 4 hours of decanting, it had opened up nicely with lots of fig-like fruits. The palate is rich and infused with age elements with a soft and rich fruit still well to the fore. The fruit is enjoying a late middle to early old age period. No need to drink up yet but age elements will begin to dominate from here on in. If you want fruit then drink now. A fine example of a well aged single-quinta port with a deft Warre's touch of assured wine making showing through the full fourty years from 1979.

"Pale auburn in colour, with a rose rim. Floral honey on the nose, pleasant but not strong. Dusty sweet redcurrant jelly on the tongue, with the tannins showing through as a gentle dusty persistence.
