The 1975 Château Pavie from Saint-Émilion comes from a vintage that was solid overall in Bordeaux. The 1975 vintage was notable for its high tannin levels, and many wines from this year have a firm structure, making them suitable for long-term aging. The 1975 Château Pavie was produced before the estate underwent significant modernization and investment in the late 1990s, under the ownership of Gérard Perse, which transformed Pavie into one of Saint-Émilion’s top estates. As such, the 1975 is a product of a more traditional winemaking approach, with less concentration and polish than modern vintages.
TAsting notes for the 1975 Château Pavie: Typically has a blend dominated by Merlot, with smaller amounts of Cabernet Franc and Cabernet Sauvignon. At this stage, the wine has developed significant tertiary aromas, with dried fruit (prune, fig), leather, tobacco, and earthy, forest-floor notes. The fruit would has faded by now, replaced by savory elements such as mushrooms, herbs, and perhaps a touch of truffle. The wine is medium-bodied, with softened tannins that have integrated over time. However, due to the 1975 vintage's firm tannin structure, some grip and astringency remains. The fruit will be subtle, mostly dried plums or old cherries, with more emphasis on earthy and savory flavors like leather, cedar, and tobacco. Acidity may still provide freshness, but the wine's structure would have mellowed considerably over the years. The finish is moderate, with earthy, leathery notes lingering, alongside traces of tobacco and perhaps a bit of old wood.
Aging Potential: The 1975 Château Pavie is at a very mature stage and the wine is not likely to improve with further aging. It will still offer an interesting experience, though. About Chateau Pavie Back in ancient times, this estate was known for its cultivation of fruit, and particularly the Pavia peach which would later become the namesake of the 19th-century château. Owned in those days by the Valette family, the château earned a Premier Grand Cru Classé B Saint-Emilion ranking in 1955. Since its purchase in 1997, the estate has gone from strength to strength. The 2012 reboot of the Saint-Emilion classification saw Pavie elevated to the status of Saint-Emilion Premier Grand Cru classé A. Pavie's vineyard is the most spread-out of all the Saint Emilion premiers crus, and also has the oldest vines in the appellation, some of which go back more than a century. The product of manual harvests and low yields (28-30 hl/ha), Pavie's wines are aged for up to 24 months in new oak barrels.
