Description
A Passito made from grapes of Erbaluce native to the Piemonte region in Northern Italy. The grapes are harvested at the end of September and laid in small wooden cases where clusters are close to each another. At the beginning of March, after a drying period of about five months, grapes undergo a careful selection and a slow pressing process. The resulting must is fermented in barriques. Aging lasts four years, at least two of which in barriques. Tasting Notes: Intense amber in colour. The nose shows the typical and natural aromas of dried Erbaluce. Intense notes of ripe, jammy and dried apricot fruit, followed by honey and sweet flowers, with pastries and persistent aromas of toasted almonds and hazelnuts. Pairings: Ideal for highly evolved cheeses, especially blue cheeses but also perfect with meringue sweets, mille-feuille, white and bitter dark chocolate.
