Barbadillo

Manzanilla Extra Dry Sherry
Barbadillo

Manzanilla is Barbadillo’s speciality and this excellent example has been aged for 3 years in Barbadillo’s cellars.

Fino style Sherries age under a layer of “flor” (a naturally occurring layer of yeast that grows on top of the wine in the barrel); this ensures the wines do not oxidise as there is no exposure to the air. The cooler maritime microclimate of Sanlúcar ensures flor grows particularly thickly all year round producing these very fresh, tangy Manzanillas, unlike the more oxidised Finos aged in the inland town of Jerez, where the flor dies back in the winter and summer months.

Oloroso Full Dry
Barbadillo

Olorosos are Sherries that have aged in the absence of flor and are rich and full. As the name indicates it is a highly aromatic wine with toffee notes. This Oloroso is very slightly sweetened to leave a smooth satisfying finish in the mouth.

A full dry Oloroso oxidatively aged in oak Sherry butts for 5 years to develop is concentrated nutty and dried fruit flavours.

result of the grapes being sun-dried to
produce concentrated sugars. The result
is an ultra sweet wine with a treacly

Barbadillo

"Obispo Gascon" Palo Cortado 15 year old Sherry
Barbadillo D.O. Jerez
**92 Points- Robert Parker** Half Bottle 37.5cl

*92 Points- Robert Parker*

A 15 year old sherry wine. Attractive colour of antique gold. The aromatic complexity reveals toasted almonds, walnuts and raisins. On the palate it is pleasant, rounded and harmonious. Deliciously smooth and lingering.

The Palo Cortado sherries are particularly special within the Jerez-Xèrés-Sherry Designation of Origin. This is because despite the fact that production follows the similar physical-chemical process of oxidative ageing as with the olorosos, the result is quite different with their organoleptic characteristics falling somewhere between those of an amontillado and an oloroso.

Barbadillo

San Rafael Medium/ Amoroso Sherry
Barbadillo D.O. Jerez

*95 Points- Guía Repsol 2013*

Mahogany colour with delicate hints of topaz with aromas of dried fruit, plums and raisins. Sweet but well-balanced and beautifully silky palate.

A touch of Pedro Ximénez added to a dry oloroso results in this type of sherry known as “amoroso.” Translated into English as loving or affectionate, the name pays tribute to the smoothness obtained during the lengthy and traditional ageing period. Its alcohol content and body mean that it can be served on the rocks.

Serving Suggestion:
Enjoy around 15 degrees Celsius with blue cheese or desserts.

Barolo Chinato, Non Vintage

Giacomo Borgogno - Classico Stravecchio

Everything starts from an ancient and secret recipe of Casa Borgogno, which originates in the 1920s. We start with the wine, Barolo DOCG. Meanwhile, in order to produce this aromatized wine, an infusion of 46 aromatic herbs (some grinded, some roughly broken-up, some other crumbled), is put in maceration into hydroalcoholic solutions, from 35 to 70 days. From the most common aromas such as vanilla, cloves, gentian, rhubarb, to the more uncommon sandal, cardamom, calamus, mace. Protagonist of this aromatized wine is obviously the quinine (China) from the Cinchona tree bark, of which we use two different varieties: Calisaya, Soccirubra.

With a history dating back to 1863, Cognac Hardy is well known for quality cognacs and traditional production methods. Passed down throughout the generations, this family house of cognac, which can be recognized by its rooster logo, was one of the very first to embrace the spoils of a worldwide distribution network.

Cognac Des Tuileries, Non Vintage

Grande Champagne Reserve Cognac (75cl)

A good Cognac is subjected to a complex manufacturing process. It is never made from the eau-de-vie of a single cru, but from a `marriage' of eaux-de-vie that vary in age and cru - some as old as a hundred. To establish the age of a Cognac, only the number of years spent in oak casks or barrels are taken into account. As soon as an eau-de-vie is decanted into a glass recipient, it ceases to age. The longer it is left to age, the more a Cognac gains in complexity, fragrance, aromas and taste (spiced, pepper and cinnamon flavours).

Alcoholic Strength by volumes 35° Gay Lussac. Fully matured in wood before bottling.
